Yes, we have finally updated our blog! I (Jessi) have entered a fun contest put together by Post Punk Kitchen. The rules were that we had to use four specific ingredients (plus any others we had), which were: fresh mint, blackberries, blackeyed peas, and bittersweet chocolate.
My dish is: Blackberry Glazed Tofusteaks with Hoppin' Salsa in Mole Sauce.
All the ingredients are:
1. extra-firm tofu
2. tofu marinade: lemon juice, tamari, garlic, mint
3. glaze: juice from canned blackberries reduced to syrup, pinch of salt and cornstarch
4. salsa: blackeyed peas, fresh blackberries, red onion, mint (can also add green pepper)
5. mole sauce: bittersweet chocolate, cocoa powder, tomato paste, water, cumin
