As promised (or threatened!), here is my (Jessi's) first attempt at an actual, original recipe:
Blackberry Glazed Tofusteaks with Hoppin' Salsa in Mole Sauce
1. cut extra firm tofu block into 3/4" thick "steaks"
2. marinate for 20 min in:
• couple tbsp tamari
• big dash of lemon juice
• 1 tsp minced garlic
• couple leaves of mint
3. grill tofu until browned.
4. for glaze:
blackberry jam thinned with a little water and a dash of salt
OR: thicken syrup from can of blackberries by simmering (stir often) with a dash of salt and a tsp of cornstarch
5. make salsa:
• 1 can black eyed peas
• 1/2 of a diced red onion
• 1/2 of a diced green pepper
• approx 10-15 torn mint leaves
• approx 10-15 blackberries, cut in half
6. lightly coat salsa in mole sauce:
• 2 Tbsp tomato paste
• 1 Tbsp water
• 1 Tbsp cocoa powder or 2 dark chocolate squares
• 1 tsp cumin
• 1/2 tsp chili powder
7. Serve! Grilled squash and zucchini would go nicely.
